Sugar Cookies
1 cup shortening- half butter and half margarine works well
1/3 cup brown sugar
1/3 cup white sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cream of tartar
2 ¼ cup flour
Cream shortening and sugars; add egg, vanilla, and combine dry ingredients. Drop by teaspoons on non-greased cookie sheets; flatten with fork. Bake at 350° for 10 minutes. Cool on wire rack. Makes 4 dozen.

Danish Sugar Cookies
Danish Sugar Cookies
1-cup butter
½ cup sugar
2 cups flour
1-cup ground pecans
1-teaspoon vanilla
Mix. Form into rolls and freeze. Slice and bake at 350° until set about 8 minutes. Dip in powdered sugar while hot. Can make four dozen.
Enjoy these simple Danish Sugar Cookies!!!

Mirowave Peanut Brittle
1 cup white sugar
½ cup light corn syrup
Stir these together in a microwave bowl for 4 minutes on high.
Add:
1 cup raw peanuts
Cook on high for 4 minutes
Add:
1 tablespoon margarine
1 tablespoon vanilla
Cook for one minute
Add:
1 teaspoon soda
Beat until it changes color. Coat a knife with margarine and spread the mixture in a pan. Cool and serve.

Crispy Rice Cookies
Crispy Rice Cookies

1 cup brown sugar

1 teaspoon vanilla
2 ¼ cups flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
2 cups quick oatmeal
2 cups crispy rice
½ cup coconut
Cream the shortening and sugars. Add the eggs and vanilla. Add the dry ingredients. Roll the mix into small balls and roll in the oatmeal, crispy rice and coconut mixture. Press onto greased cookie sheet with forks. Bake at 350° for 15 minutes.
